LUNCH FOR LEPRECHAUNS - HAPPY ST. PATRICK'S DAY!



This year, even more so than others in recent memory, Spring seems to be announcing her arrival with enthusiasm and vigor, rather than dragging her feet behind in a last ditch attempt to prolong the lethargic airs of Winter.  As much as I’ve maintained Summer to be my favorite season of all (and, to be sure, it definitely is), this juncture we are at right now has an incredibly special feel to it, and one that I cannot deny is high up there on my list of life’s pleasures.  I still can't get over spinach and how great it makes me feel every day.            
I created this fabulous and fun recipe for St. PATRICK'S DAY. Eat in style this delicious spinach, turkey & cilantro meatball recipe. It is so simple and good you might just get hooked on it and want to make it all year. This recipe is great if you want to cut down on red meat and chicken, it also gives you a great amount of energy through out the day! You can serve it with white rice, or even a fruit salad to give it a fresh twist!


     INGREDIENTS
  •  3 pounds of 97%  or 99%  lean ground turkey meat.
  •  1 bunch of fresh cilantro.
  •  2 handfuls of spinach.
  •  3 eggs.
  •  1/2 cup water.
  •  4 tbsp of oil of your choice, I personally like grape seed oil,  sunflower oil or olive oil, you can also use avocado oil.
  •  1 tsp of fresh ground pepper.
  •  2 or 3 tbsp of red pepper flakes
  •  2 cloves of garlic
  •  1 tbsp of powdered chicken stock


    THE METHOD
      1. Place in blender: Spinach, cilantro, garlic, chicken powder & water. 
          Blend until smooth.
      2. Chop onions and  cook in a small sauce pan until lightly caramelized.
      3. Add ground turkey in large mixing bowl. Add and mix all ingredients
           from steps 1 & 2
           your turkey should look very green.
      4. Preheat oven at 350' and cover a 3 inch baking pan with foil so 
           the meatballs do not stick on pan.
      5.  You will portion your meatballs using a tablespoon. 
            2-3 tablespoons = 1 meatball.
      6. This will give you enough to make about 30 - 40 little meatballs. 
           You can make them any size you want. 
       7. Once you have meatballs all portioned and made into little balls 
            you lightly drizzle 2 tbsp  of oil in pan . Place in oven to cook for 20-30min.
       8. Remember some ovens run warmer than others
            so always check them after 20 min.


     GARNISH

  • Sprinkle red pepper flakes
  • Fresh cilantro / lime optional

Vegetarians Can't Live on Rabbit Food and Doritos Alone


If you're a vegetarian, you need to make sure you're getting enough protein (switch the meat and eggs to nuts, beans and soy) iron, and vitamin B12. Remember to drink water and keep hydrated!

Best Foods containing iron:
- Dried beans
- Spinach
- Dried fruit

B12 comes naturally only from animal products but can be found in some fortified (not enriched) breakfast cereals, fortified soy beverages, some brands of nutritional (brewer's) yeast and vitamin supplements.
Vegetarians and vegans must find alternative resources for calcium and vitamin D that we omnivores get from dairy products. A good tip! Some stores even sell multi vitamin and calcium gummy vitamins with many good flavors, for those that have a sweet tooth.
Or you can try calcium -fortified soy beans, tofu, spinach, molasses and oatmeal.

Bison Carpaccio with Sherry Vinaigrette

Serves 2-4 people depending on the size of the plate.

8oz round of bison filet (Buffalo Filet)
1 tsp of capers
Parmesan Cheese
Fresh Ground Pepper
Frisee Lettuce or Mache lettuce
Olive oil 2 table spoons
Sherry Vinaigrette 1/2 tsp

Meat:
Wrap your filet in plastic and freeze
When ready to serve, slice filet in paper thin rounds and place overlapping on plate.

Sauce:
Whisk Olive oil and Sherry Vinaigrette

Method:
1. Make sure your plate is cold, you can keep them in the fridge while prepping this dish.
2. Poor a little olive oil on the plate to keep meat moist.
3. Place the sliced rounds of bison meat on the plate.
4. Add a little sauce in the center also lightly over and around the plate.
4. Add fresh ground pepper, capers and parmesan cheese.
5. In this photo I used frisee lettuce, you can also use a darker green lettuce called mache.

This dish is absolutely delicious for any time of the year! My favorite on weekends with a nice glass of wine!

MELON & RASPBERRY MOJITO




THE SECRET
4 cups of melon
2 table spoons of agave 
1 cup of raspberries
2 table spoons of chopped mint leafs 
1 cup of vodka
1 cup of ice

PROCESS
Place all ingredients in blender for 10 seconds

GARNISH
Fresh raspberries &  fresh mint leafs

Serve in a chilled tall glass

Bubbly Holiday Cheer!


     HOLIDAY CHAMPAGNE COCKTAIL



SECRET
2 cups of pomegranate juice
2 cups of martinelli's apple sparkling cider
4 cups of champagne
METHOD
Add pomegranate juice, and martinelli's sparkling cider into pitcher or individual glass, top it off with champagne
Serve chilled in a champagne glass or pitcher serving 4 persons or more.

SPICE IT UP WITH PASSION COCKTAIL


SPICED PASSION FRUIT VODKA FLOAT
SECRET
4 cups of passion fruit juice 
2/5 whipped cream
3/4 cups of flawless vodka


METHOD

 Add all ingredients in shaker with ice for 1 minute,  serve chilled.


GARNISH
Dip the edges of the glass in lemon and add ground coffe beans and nutmeg arround the edges. 1 orange twist for additional color and taste!

(you can substitute with plain yogurt or whipped cream)
2/5 passion fruit juice
3/4 cups of flawless vodka


METHOD
Add all ingredients in shaker with ice for 1 minute
Serve chilled in a martini glass


GARNISH
Dip the edges of the glass in honey and add ground coffe beans arround the edges
