LUNCH FOR LEPRECHAUNS - HAPPY ST. PATRICK'S DAY!



This year, even more so than others in recent memory, Spring seems to be announcing her arrival with enthusiasm and vigor, rather than dragging her feet behind in a last ditch attempt to prolong the lethargic airs of Winter.  As much as I’ve maintained Summer to be my favorite season of all (and, to be sure, it definitely is), this juncture we are at right now has an incredibly special feel to it, and one that I cannot deny is high up there on my list of life’s pleasures.  I still can't get over spinach and how great it makes me feel every day.            
I created this fabulous and fun recipe for St. PATRICK'S DAY. Eat in style this delicious spinach, turkey & cilantro meatball recipe. It is so simple and good you might just get hooked on it and want to make it all year. This recipe is great if you want to cut down on red meat and chicken, it also gives you a great amount of energy through out the day! You can serve it with white rice, or even a fruit salad to give it a fresh twist!


     INGREDIENTS
  •  3 pounds of 97%  or 99%  lean ground turkey meat.
  •  1 bunch of fresh cilantro.
  •  2 handfuls of spinach.
  •  3 eggs.
  •  1/2 cup water.
  •  4 tbsp of oil of your choice, I personally like grape seed oil,  sunflower oil or olive oil, you can also use avocado oil.
  •  1 tsp of fresh ground pepper.
  •  2 or 3 tbsp of red pepper flakes
  •  2 cloves of garlic
  •  1 tbsp of powdered chicken stock


    THE METHOD
      1. Place in blender: Spinach, cilantro, garlic, chicken powder & water. 
          Blend until smooth.
      2. Chop onions and  cook in a small sauce pan until lightly caramelized.
      3. Add ground turkey in large mixing bowl. Add and mix all ingredients
           from steps 1 & 2
           your turkey should look very green.
      4. Preheat oven at 350' and cover a 3 inch baking pan with foil so 
           the meatballs do not stick on pan.
      5.  You will portion your meatballs using a tablespoon. 
            2-3 tablespoons = 1 meatball.
      6. This will give you enough to make about 30 - 40 little meatballs. 
           You can make them any size you want. 
       7. Once you have meatballs all portioned and made into little balls 
            you lightly drizzle 2 tbsp  of oil in pan . Place in oven to cook for 20-30min.
       8. Remember some ovens run warmer than others
            so always check them after 20 min.


     GARNISH

  • Sprinkle red pepper flakes
  • Fresh cilantro / lime optional
